Burgers with Spinach and Garlic
1 1/2 pounds ground turkey or beef
10 ounces baby spinach leaves
Zest of one lemon
3 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
- Fire up the grill. Bring a saucepan half full of water to a
boil. Add spinach and cook for a few minutes until it wilts.
Drain in colander using the bottom of another bowl to
compress it and squeeze out the water.
- In a large bowl, mix together all ingredients. Divide evenly
and flatten burgers on waxed paper. Grill until done.
- Serve on whole grain buns with condiments of your choice.
