8 slices whole grain country loaf
4 tablespoons olive oil
1 large garlic clove, peeled
2 medium-sized heirloom tomatoes, coarsely chopped
1/2 red onion, coarsely chopped
3 tablespoons fresh basil, chopped
2 tablespoons fresh parsley, minced
1 1/2 tablespoons red wine vinegar
Salt and freshly ground pepper to taste
- Preheat broiler. Arrange bread slices on a baking sheet
and broil until browned on one side. Turn over and brown
on the other side.
- Brush slices with two tablespoons olive oil. Cut garlic clove
in half and rub cut ends on the bread.
- Mix tomatoes, red onion, basil, parsley, red wine vinegar,
and remaining olive oil in a bowl. Season to taste with salt
and pepper. Place spoonfuls of mixture on bread and
