Bruschetta

Serves 4

Ingredients:

8 slices whole grain country loaf
4 tablespoons olive oilBruschetta.pub
1 large garlic clove, peeled
2 medium-sized heirloom tomatoes, coarsely chopped
1/2 red onion, coarsely chopped
3 tablespoons fresh basil, chopped
2 tablespoons fresh parsley, minced
1 1/2 tablespoons red wine vinegar
Salt and freshly ground pepper to taste

 

Preparation:

  1. Preheat broiler. Arrange bread slices on a baking sheet
    and broil until browned on one side. Turn over and brown
    on the other side.
  2. Brush slices with two tablespoons olive oil. Cut garlic clove
    in half and rub cut ends on the bread.
  3. Mix tomatoes, red onion, basil, parsley, red wine vinegar,
    and remaining olive oil in a bowl. Season to taste with salt
    and pepper. Place spoonfuls of mixture on bread and
    serve.
